Producing Ligurian quality oil is an art, but much of the credit is due to the variety of plants that, thanks to centuries of adaptation to the territory and the climate, provide a low acidity product with a soft fruity aroma and a sweet sensation which enhances the characteristics of the food without being intrusive.
